Fried Bait

As a long-time fisherman on the east coast of Florida, I have been using sand fleas for bait for sometime now.  My favorite catch is the sand flea lover, the Florida Pompano.  A delicate, and amazingly flavorful surf-caught fish. 

I love to cook, and love to try new foods and am a huge fan of Andrew Zimmern’s show, Bizarre Foods.  I have seen (a few times) an episode where he travels to Thailand, and sure enough tries fried ’sea cicadas’.  Also known as the ’sand flea’ or ‘mole crab’, he describes the experience as good, and the taste somewhere between shrimp and soft-shell crab.  So today, the adventure begins.  I have caught quite a few fleas of various sizes, cleaned them the best i can.  This evening I will try a new recipe and will share the experience, lessons learned and overall culinary experience with you later.  Stay Tuned!!
